Growing up, our Sunday dinners were very home-grown. I grew up on a ranch so our beef roasts came from our cattle, our peas and new potatoes came from my Grandpa Ray’s garden and my mom made homemade rolls. It was all very traditional except for our salad. I love Asian food and always have. My mom added this Chinese Wonton Salad Bowl to our Sunday dinners and it is still a favorite. My mom makes it every time I come home and in our family recipe book it is titled “Michelle’s Chinese Chicken Salad”. Yep, it’s good and easy.
You can make it in a wonton bowl like this video shows or you can fry the wontons and break on top of the salad. Both are delicious, the bowls just give it a “wow” factor.
Heat oil in a pan on high and have a medium and small sized bowl ready. Place large egg roll wraps one at a time into the oil. Allow to cook until brown and then flip to brown the other side. When finished, quickly put the hot wonton in the medium bowl and then put the small bowl on top of the wonton to create a bowl shape. These are your wonton bowls. If you aren’t going to do the bowls, just place the fried wonton on a paper towel to cool.
Fry rice noodles in the heated oil. Set aside
Mix dressing together.
Create salad by placing lettuce, cooked chicken, green onions, almonds, rice noodles and wontons (if not using them as a bowl) in a bowl.
Right before eating, stir salad dressing and pour over salad. Enjoy!

2 T sugar
2 tsp salt
1 tsp accent (optional)
1/2 tsp pepper
1/4 C salad oil
1 T sesame oil
3 T rice vinegar
